How to store & use your achar

  • Use a clean, dry spoon every time. Even a drop of water can spoil achar.
  • Keep the pieces under the oil. The mustard oil layer on top keeps the achar fresh without vinegar or preservatives.
  • Close the lid tightly after every use.
  • Store in a cool, dry place, away from direct sunlight and the stove.
  • A little goes a long way: a small spoonful with each meal is enough.
  • Don’t throw the oil away: the masala oil is full of flavour. Use it on paratha, in daal tadka or with plain rice.

Amla Achar:

AL-Afraah Amla ka Achar (also known as aanwale ka achar or amla pickle) is made from whole desi amla. Each amla is washed and cleaned of dark spots, then steamed, marinated in salt and turmeric, and matured in our traditional mango achar masala and pure mustard oil. The result is a homemade amla pickle that is pleasantly sour, tangy and full of achari flavour, with no vinegar and no chemical preservatives.

Making a good amla pickle takes patience and the right steps. We don’t use vinegar or chemicals to soften the amla; instead, we follow a simple traditional process:

  1. Washing and Cleaning: Every amla is washed, and the dark spots on its peel are cleaned by hand.
  2. Steaming: The amla are gently steamed so they soften and can absorb the masala.
  3. Salt and Turmeric: The steamed amla are marinated in salt and turmeric.
  4. Mango Achar Masala: Finally, they are added to our ready base of mango achar masala in pure mustard oil, where they mature into a tangy, full-flavoured amla ka achar.

Enjoy your aanwale ka achar with daal chawal, paratha or khichdi for a sour, tangy kick in every meal. Love tangy fruit achars? Try our Lasooray ka Achar or our Mango Pickle, which shares the same masala.
