How to store & use your achar

  • Use a clean, dry spoon every time. Even a drop of water can spoil achar.
  • Keep the pieces under the oil. The mustard oil layer on top keeps the achar fresh without vinegar or preservatives.
  • Close the lid tightly after every use.
  • Store in a cool, dry place, away from direct sunlight and the stove.
  • A little goes a long way: a small spoonful with each meal is enough.
  • Don’t throw the oil away: the masala oil is full of flavour. Use it on paratha, in daal tadka or with plain rice.

Do you love a sharp, tangy bite next to your favourite food? At AL-Afraah, we offer a centuries-old favourite: our Nimbu ka khatta meetha achar. It is a traditional side that brings a fresh, tangy balance to rich meals. Lemon achar has been made in our homes for generations, and our recipe captures that essence.

The Traditional Process: Lemon Achar Recipe

We stick to the traditional, homemade ways of our elders. Our lemon ka achar is prepared with patience, not chemicals:

  1. Hand-Selected Lemons: We source premium, thin-skinned lemons that are naturally high in citric acid and juiciness. Thin skin is crucial because it softens perfectly during the curing process.
  2. Salt and Turmeric Overnight marination: It makes the lemon peels “makkhan” soft. Overnight marinated lemons are drained and then added to mustard oil for preservation.
  3. Our Spice Blend: We infuse our achar with salt and roasted herbs for a balanced, tangy-spicy taste.
  4. Preserved the Traditional Way: Our nimbu ka achar matures slowly with salt and spices, giving it a rich khatta meetha flavour.

Taste & Usage

Our lemon achar goes far beyond just a tangy kick. The soft, matured peels and juicy pieces make it a favourite with daal chawal, khichri and parathas.

  • Before a Heavy Meal: A small piece of lemon ka achar alongside biryani or pulao adds a fresh, sharp contrast.
  • Naturally Matured: Because it is cured slowly and naturally, the flavour keeps getting richer over time.
  • Culinary Versatility: Use the leftover juice of this achar to marinate chicken or fish for an “Achari” flavor, or mix it into a salad dressing to replace synthetic vinegar.

Storage & Sustainability

Since our product is 100% natural, it only gets better with age. We recommend storing it in a glass jar and using a dry spoon to prevent any moisture from entering. This lemon ka achar doesn’t just last months; it can last years if handled with care, becoming more flavourful over time.

The AL-Afraah Promise

Our nimbu ka khatta meetha achar is a “Clean Label” product, meaning no artificial colors or flavors. We aren’t just selling you a condiment; we are offering a piece of heritage.
